Soft Pink Occasion Cake
My fellow cake decorator Dennis made these two cakes today, both chocolate cake with chocolate mousse filling and pink buttercream icing with ganache poured on top. I helped out by stacking the cakes and decorating them with the cupcake, writing and rosebuds. I love the way spray roses dress up a simple cake! Regular size roses are awkwardly large on most cakes, but spray roses are delicate, elegant and feminine.

Chocolate cake with strawberry mousse filling and swiss meringue buttercream. The cap is made from a cupcake with a piped and hardened square of chocolate on top. The scroll is made of marzipan.

Special Order Saturday
Yesterday I decorated three special order cakes in nearly the exact same style. The customers didn’t know each other, they weren’t attending the same event, it was just a freak occurance that I have never experienced before. One customer wanted pink and purple flowers, butterflies and little duckies on her cake. The second customer wanted pink and purple flowers, a berry border, butterflies and ladybugs. The third customer wanted pink and purple flowers, butterflies and bumblebees. I guess spring is experiencing it’s last gasp here in Sacramento at little girls’ birthdays all over town!
The butterflies are made out of melted chocolate piped onto parchment paper, sprinkled with sprinkles (what else??), and frozen solid. Keep them frozen until just before putting them on the cake. It’s a very simple way to put a 3D decoration on a cake or cupcakes!
If you have read my About Me section you will know how dear my Nana is to me. On Saturday, May 5th, my Nana died. She was 91 years old and her health had been failing steadily in the last few years. I made this one last cake with Nana’s picture watching over me, for her memorial.
This is a chiffon cake with a lemon simple syrup, a thin layer of lemon curd, a thick layer of mascarpone and almond cream, tons of fresh blueberries, and a vanilla swiss meringue buttercream frosting. She adored blueberries. It was decorated with purply blue hydrangeas to symbolize Cape Cod, one of her favorite places, and her favorite colors. I laminated a sweet photo of her with her cat Morris and piped some of her nicknames along the front, Nana, Phid (short for Phyllis), Mom, Great Nanna. Mother’s Day Cakes
